Ingredients
- 1 bottle of RESOURCE® ULTRA + (Vanilla flavor)*
- 25 ml water
- 25 ml milk
- 1 egg
- 20 g butter
- 25 g flour
- 10 g sugar + 15 g for the caramel
- 10 to 12 g pecans
Preparation
- 1. Pour the contents of the bottle into an ice cube tray and freeze for 4 hours.
- 2. Prepare the choux pastry: boil water and milk with butter and 10g of sugar. Add the flour and cook over low heat until it dries out. Turn off the heat and add the egg.
- 3. On a baking sheet lined with parchment paper, make 4 éclairs using a pastry bag. Bake for 30 minutes in a fan-assisted oven at 160°C (320°F). Let them cool.
- 4. Fill each éclair with 3 scoops of ice cream. With the remaining sugar, make a dry caramel in a pan. Drizzle the éclairs with caramel threads. Sprinkle with chopped pecans and serve immediately.
