Ingredients
- 100 ml of Resource® ULTRA® Vanilla
- 1 gelatin sheet (2 g)
- 80 ml of double cream
- 1/2 vanilla bean
- 1 lemon (zest)
- 15 g of durum wheat semolina
- 1 egg yolk
- 1 tbsp. of sugar
- 25 ml of Resource® ULTRA® Strawberry
- 75 g of strawberries
- 1 tbsp. of sugar
- Fresh strawberries
Preparation
- 1. Whip the double cream until stiff, then chill.
- 2. Soak the gelatin sheets in cold water.
- 3. Bring Resource® ULTRA® Vanilla, the sliced and scraped vanilla bean, and the lemon zest to a boil.
- 4. Sprinkle in the durum wheat semolina and let simmer gently for 2 minutes, stirring constantly. Then remove from the heat, wring out the gelatin sheets, and incorporate them into the semolina mixture.
- 5. Whisk the egg yolks and sugar until a frothy consistency is obtained and fold into the semolina mixture.
- 6. Allow the semolina mixture to cool briefly and gently fold in the whipped double cream.
- 7. Pour the semolina mixture into molds, cover with plastic wrap, and chill for 2 hours.
- 8. Blend all ingredients with an immersion blender or a regular blender to obtain a fine and smooth mixture.
Tips
Prepare in advance, chill, and serve cold.
Presentation
Unmold the semolina cake onto a plate and decorate with strawberry coulis, fresh strawberries, and whipped cream.
