Ingredients
- 150 ml of Resource® ULTRA® Vani
- 180 g of chicken breast
- 1 tbsp. of rapeseed oil
- 2 tbsp. of finely chopped onions
- 90 g of pineapple cut into small cubes
- 1 tsp. of mild curry
- 2 pinches of salt
- 2 pinches of pepper
- Fresh coriander
- 120 ml of broth
- 150 ml of coconut milk
- 80-100 g of raw basmati rice (or 240 g if cooked), colored sprouts
Preparation
- 1. Cut the chicken breast into strips.
- 2. Heat the rapeseed oil in the pan and sear the chicken breast over high heat.
- 3. Add the onion and curry and continue to sauté over low heat.
- 4. Deglaze with the broth and cook for 8 to 10 minutes until tender, then add the pineapple and coconut milk and let cook for another 5 minutes.
- 5. Mix in Resource® ULTRA® Vanilla and season with salt and pepper.
Tips
The spiciness of the curry can be adjusted with spicier curry powder or chili flakes.
Presentation
Serve the curry chicken with basmati rice and garnish with colored sprouts and coriander.
