Ingredients
- 100 ml of Resource® ULTRA® Chocolate
- 1 egg
- 1 egg yolk
- 1 tbsp. of sugar
- 150 ml of double cream
- 100 g of Cailler dark chocolate 64%
- 1 pc. Gelatin sheet (2 g)
- Chocolate shavings/sprinkles, whipped cream
Preparation
- 1. Whip the double cream until stiff, then chill. Soak the gelatin sheets in cold water.
- 2. Cut the chocolate into small pieces and melt it in the microwave or in a double boiler (bain-marie).
- 3. Whisk the egg, egg yolk, and sugar in a bowl over a double boiler until a frothy mixture is obtained.
- 4. Wring out one gelatin sheet and dissolve it in a little heated Resource® ULTRA® Chocolate.
- 5. Gently fold the chocolate mixture, the rest of the Resource® ULTRA® Chocolate, and the liquid chocolate into the beaten egg mixture.
- 6. Allow the chocolate mixture to cool slightly and gently fold in the whipped cream.
Tips
Prepare in advance, chill, spread (or layer), and serve cold. The chocolate mousse can also be garnished with red berries.
Presentation
Pour the chocolate mousse into glasses or bowls and chill for 2 hours. Garnish with whipped cream and chocolate shavings before serving.
